100 YEARS OF BAROLO Our deepest gratitude to Maestro Armando Cordero 2 THREE GENERATIONS OF GREAT WINES The farm of Sordo Giovanni, now run by his son Giorgio, is situated a few kilometres from Alba at the foot of the Barolo hill, in the municipal district of Castiglione Falletto, in Cuneo province. The family business has been engaged in wine growing for over three generations. It was founded in the early 900s by the present owner’s grandfather Giuseppe, but the real turnaround came with his father Giovanni who, together with his wife Maria, testimony of the firm’s past, acquired numerous vineyards in some of the finest areas of Barolo territory: ’’i Sorì’’. The lands of these vineyards, made up of very deep and compact calcareous marl, rich in micro elements, provides an ideal environment, with the complicity of the micro climate typical of the Langhe, for the cultivation of Nebbiolo, an extremely vigorous and demanding varietal which produces wines of great prestige, age-worthy and rich in fragrance. Today, the firm extends over a total surface area of 53 hectares planted with vines, distributed in the municipal areas of Castiglione Falletto, Serralunga d’Alba, Monforte d’Alba, Barolo, Novello, La Morra, Verduno, Grinzane Cavour and Vezza d’Alba. The firm is equipped with modern plants for wine-making, storage and bottling. An impressive ageing cellar, fitted with over one hundred high capacity oak barrels, enables the wine to mature and develop perfectly. All production processes, both in the vineyard and in the cellar, can depend on the tried-and-tested traditional methods handed down to us by our ancestors. 3 4 THE GREATEST RESPECT FOR NATURE AND OUR SURROUNDING ENVIRONMENT With this philosophy in mind, we farm our vineyards according to the guidelines of modern-day agriculture. We control the green cover of rows using grasses and other plant species which, as well as consolidating the land and preventing it from being washed out by rainwater, increases the organic substances when planting, thus totally eliminating the use of chemical fertilizers and weed killers. We mainly treat the vines with sulphur and cupreous products such as a bordeaux mixture and, only in the event of particularly serious circumstances, do we make use of other types of sanitary protection, while strictly adhering to the advice and doses recommended by qualified agronomists. We have solved the difficult problem of waste water by constructing a latest generation waste water depuration plant which enables us to return water to the land devoid of polluting substances. Guided by such principles, which we continue to improve thanks to scientific progress, we hopefully contribute to safeguarding and protecting Mother Earth. GIORGIO SORDO 5 6 BAROLO Denominazione di Origine Controllata e Garantita World famous for centuries, this noble descendent of the Nebbiolo varietal is historically associated with the Italian Risorgimento. Great names such as those of Marquess Giulia Falletti di Barolo, Count Cavour and the first members of the Savoy Royal family witnessed its birth and contributed to making it great. An austere, generous and age-worthy wine rightly considered to be the pride of the Italian wine-making tradition. Varietal: Nebbiolo subvariety Lampia, Michet and Rosé. Area of production: vineyards in Castiglione Falletto, Serralunga d’Alba, Monforte d’Alba, Barolo, Novello, La Morra, Verduno and Grinzane Cavour. Wine-making: the grapes, harvested when fully ripened, are immediately processed when they reach the cellar. Tumultuous fermentation, which takes place at around 30 °C and is followed by submerged cap maceration, lasts for about six weeks according to the traditional method. Immediately after devatting the wine, we create the ideal cellar conditions for a perfect malolactic fermentation. Maturation and ageing: the wine matures in traditional Slavonian oak barrels of great capacity and is then aged in bottles before being sold. It enjoys an extraordinarily long life. Sensory characteristics: garnet red in colour with orangey nuances which become gradually more noticeable as the wine ages; an aroma that is subtle, evolved, intense, pervasive and lingering; a warm, full-bodied, complex, dry and well-balanced taste. Its austere nature is determined by the presence of sweet and complex tannins. TEMP 18 °C 7 BAROLO Denominazione di Origine Controllata e Garantita ROCCHE DI CASTIGLIONE The vineyard is located in one of the most suitable areas in the municipality of Castiglione Falletto. The colour of this wine impresses us with its splendid combination of garnet and ruby reds which fill the glass with light. A perfectly brilliant wine leaving viscous “legs” on the sides of the glass. Its alcoholic strength is expressed by an abundance of “church windows” and tears. It takes us by surprise with its intensity, richness and remarkably lingering bouquet. The varietal characteristics of this cultivar are enhanced and intensified by crisp and elegant sensations, recalling ripe black cherries, blueberries and peach jam. Floral nuances, “mountain hay”, liquorice and tobacco enhance the noble tertiary fragrances which have developed during maturation. Hints of the undergrowth and fine wood species complete the sensory experience. The opening sensation on the palate is warm and mouth-filling. Pronounced yet soft tannins and a fair presence of acids enhance the structure of a wine that is powerful, rich and well suited to being aged for many years. In conclusion, here we have an austere, generous and prestigious wine. The Barolo from this area is extremely long-lived and holds great promise for the future. TEMP 18 °C 8 BAROLO Denominazione di Origine Controllata e Garantita PARUSSI This delightful vineyard is embraced by a gently sloping natural amphitheatre on the hillside which, from Castiglione Falletto, descends towards the road leading to Alba. The excellent exposure known as ‘’Sorito della Sera’’ gives these vines many hours of sunshine, allowing the grapes to grow and ripen perfectly. A magnificent colour of fairly intense garnet red. A wine that is perfectly brilliant, dense, and generous in its formation of tears and “church windows”. Its fragrances are evolved, very pervasive and lingering. Sensations recalling mint, sage and sweet spices. On the l palate this wine expresses all of its elegance, fullness and harmony, while its generous alcohol content makes it warm and austere. Pronounced yet sweetish tannins, together with a fine balance of acidity and richness of flavour, confirm that this is a wine destined for many years of ageing. A prestigious wine that will regale those who appreciate its qualities with sensations and recollections they will not easily forget. TEMP 18 °C 9 BAROLO Denominazione di Origine Controllata e Garantita GABUTTI A vineyard planted in a so-called ‘prime category’ sub-zone which, owing to its superb characteristics, is one of the most interesting and prestigious in the municipal district of Serralunga d’Alba. A splendid colour of deeply intense garnet red with the positive presence of luminous ruby reflections bearing the promise of excellent future development and longevity. Perfectly brilliant. A noticeable development of “church windows” and tears flowing down the sides of the glass are indicative of great generosity, structure and alcoholic strength. A bouquet that is austere, noble and remarkable, as well as being very pervasive and lingering. Excellent self-assurance. Amidst the strong yet non-intrusive sensations of oak, it is possible to perceive the aroma of ripe fruit and the fragrance of mountain flowers. A slight presence of resin accentuates tones of sweet spices and peach leaves. The first’ in-mouth, sensation is one of intense heat followed by the evident presence of fine tannins tending to sweetness. A pronounced savoury flavour typical of the soil. The aromas and sensations initially perceived by the nose are confirmed and considerably intensified. A great structure, harmony and balance, combined with a lingering aromatic persistence and complexity are the incontrovertible prerequisites of a glorious longevity. TEMP 18 °C 10 BAROLO Denominazione di Origine Controllata e Garantita PERNO A vineyard of exceptional value set in one of the most prestigious areas of the small hamlet of Perno in the municipal district of Monforte d’Alba. An extraordinary colour of intense ruby red with pervasive garnet reflections indicating a young wine, not yet touched by the effects of the early years of maturation. A transparent and brilliant wine with a generous and noticeable formation of “church windows” and tears running copiously down the sides of the glass: an indication of its pronounced alcoholic strength and abundance of extractive substances. The bouquet is self-assured, intense, pervasive and broadbased. It tells of delicate hints of ripened fruit, cacao, fine woods, mint and sweet spices. In mouth, we experience an initial sensation of intense heat that is pleasing and almost sweet. A noble and austere wine thanks to the presence of mature tannins which blend well with its pronounced flavour and generosity. A note of excellence is provided by a slow development which promises and guarantees an extremely long life and further positive evolutions of its olfactory and in-mouth sensations, already quite remarkable. An extraordinary wine of great structure, very well-construed and precisely orchestrated. The long, intense lingering of its aroma confers great class and nobility. TEMP 18 °C 11 BAROLO Denominazione di Origine Controllata e Garantita MONVIGLIERO Our vineyard, completely exposed to the midday sun, is set like a precious gem in this splendid wine-growing area of the Verduno municipal district. The Monvigliero hillside was already highly rated one hundred years ago by all Barolo producers. A wine with a beautiful colour of garnet red, with inviting ruby red reflections. Pervasive and lingering ‘church windows’ and tears accentuate its perfect clarity. A bouquet that is elegant, intense, pervasive and lingering. Hints of wilted rose, autumn leaves, sweet tobacco and spices are clearly perceivable. On the palate, it reveals a great structure, together with pleasing sensations of intense heat. A well orchestrated savoury flavour provides freshness, while sweetish tannins confer a note of interest. Its taste spectrum is enhanced by slight hints of chocolate, ripe fruit and spices. A wine of great balance, with the power to excite and satisfy the most discerning consumer. TEMP 18 °C 12 BAROLO Denominazione di Origine Controllata e Garantita RAVERA The vineyard this cru comes from stretches over the hillside, magnificently exposed to the midday sun, in the municipal district of Novello. From time immemorial, this wine-growing area has been classified by Novello producers as one of the most ideally suited to the cultivation of the Nebbiolo cultivar. This wine impresses us with the tone, intensity and extraordinary beauty of its ruby red colour, with garnet reflections standing out in its crystal-clear brilliance. The abundant formation of ‘church windows’ and tears confirms its extraordinary generosity. Its bouquet is very intense, pervasive and lingering. It recalls the fragrance of wilted rose, mountain flowers and fine wood species. On the palate the first impression is warm and mouth-filling, leading us to its great structure, rich in balance and gravitas. The tannins tend to be sweet, confirming the full essence of the Nebbiolo cultivar. A good level of acidity makes it a pleasant and appetizing wine. Its lingering aroma is drawn out and rich in nuances. TEMP 18 °C 13 BAROLO · LE RISERVE Denominazione di Origine Controllata e Garantita 14 GREAT YEARS OF PRODUCTION Only the great years of production deserve to be called ”Reserves”. Matured in traditional Slavonian oak barrels of great capacity and then aged in bottles before being marketed. A great structure, harmony and balance, combined with a lingering aromatic persistence and complexity are the incontrovertible prerequisites of a glorious longevity. A prestigious wine that will regale those who appreciate its qualities with sensations and recollections they will not easily forget. All of our reserve wines are fruit of a lengthy submerged cap maceration, carried out according to the age-old traditional method of the great Barolo patriarchs. 15 16 ZERODUE Red wine ‘’Zerodue’’ is the imaginative name encapsulating the essence of this wine, differentiating it from what is now the consolidated company philosophy. ‘’Two’’ wines have been used to create this magnificent red wine; ‘’Zero’’ symbolically stands for precision, the number destined to spark great ventures, great stories and great wines. A beautiful colour of ruby red with orangey nuances that become more and more noticeable with the passing of time. Endowed with fragrances that are intense, evolved and lingering, with hints of ripe fruit and sweet spices. Its taste is warm, full-bodied and well-balanced, with soft complex tannins and a long lingering aroma. It is a wine of great balance and longevity. It pairs well with each course of regional Piedmont cuisine or international fare. TEMP 18 °C 17 18 19 BARBARESCO Denominazione di Origine Controllata e Garantita Varietal: Nebbiolo subvariety Lampia, Michet and Rosé. Area of production: vineyards in Barbaresco, Neive and Treiso. Wine-making: the grapes, harvested when fully ripened, are immediately processed on reaching the cellar. Alcoholic fermentation is followed by submerged cap maceration which, true to tradition, lasts for approximately three weeks. After numerous racking operations, which gives us a transparent and even wine, the ageing process begins. Maturation and ageing: the time spent in traditional Slavonian oak barrels of great capacity gives Barbaresco a correct balance, a good maturation of its tannins and a delicately captivating bouquet. It is then bottled and stored for a further period before being put on the market. Sensory characteristics: garnet red in colour with orangey nuances that become gradually more noticeable as the wine ages; evolved and delicate fragrances of undergrowth, spices and violet; a taste that is dry and well-balanced, full-bodied and complex with balanced tannins, lingering with a pleasing bitter finish. TEMP 18 °C 20 NEBBIOLO D’ALBA Denominazione di Origine Controllata The Nebbiolo grown in the steep sunny vineyards of the Roero, on the left bank of the Tanaro river and in some municipal districts of the Langa, gives us some generous fruit-forward wines. The loose, sandy soil, rich in mineral salts, gives wine a remarkable wealth of fragrances and in-mouth sensations. Varietal: Nebbiolo subvariety Lampia, Michet and Rosé. Wine-making: the grapes, harvested when fully ripened, are immediately processed on reaching the cellar. Traditional submerged cap fermentation lasts for about ten days at a temperature of 30 °C. Maturation and ageing: the wine matures in traditional Slavonian oak barrels of great capacity and is then aged in bottles before being sold. Sensory characteristics: garnet red in colour with orangey nuances that become gradually more noticeable as the wine ages; fragrances that are subtle, evolved, intense, pervasive and lingering; a warm, full-bodied, complex, dry and well-balanced taste. Its austere nature is determined by the presence of sweet and complex tannins. TEMP 18 °C 21 DOLCETTO D’ALBA Denominazione di Origine Controllata Each hill, each vineyard even, produces its own particular “Dolcetto”, whose characteristics are well differentiated and easily recognizable. It is thanks to the particular composition of the soil in our Langhe district, rich in mineral salts, that the Dolcetto produced in these areas, as well as boasting a remarkable structure, is endowed with the vinosity and great wealth of flavour and olfactory sensations for which it is renowned. Sensory characteristics: a red ruby colour with hints of violet that tend to fade in time; fragrances that are subtle, floral, intense, pervasive and lingering; a fresh, fruit-forward, full-bodied, complex, dry and well-balanced taste. TEMP 18 °C 22 BARBERA D’ALBA Denominazione di Origine Controllata The Barbera varietal first appeared on the hillsides of the Langhe in the early 900’s, at a time when the entire region was engaged in the difficult reconstruction of the vineyards destroyed by the phylloxera aphid. Owing to its rustic nature, it has adapted well to the environment and the particular soil composition of the area. Varietal: Barbera. Area of production: vineyards in Castiglione Falletto and Serralunga d’Alba. Wine-making: the grapes, harvested when fully ripened, are immediately processed on reaching the cellar. Fermentation lasts for two weeks at a temperature of 28 °C, according to the traditional method. Maturation and ageing: storage in stainless steel tanks safeguards its freshness. It is left to rest in the bottle before being marketed. It enjoys an extraordinarily long life. Sensory characteristics: ruby red in colour with garnet red nuances that become gradually more noticeable as the wine ages; fragrances that are subtle, grapey, intense, pervasive and lingering; a warm, full-bodied, complex, dry and well-balanced taste. TEMP 18 °C 23 BARBERA D’ALBA Denominazione di Origine Controllata SUPERIORE MASSUCCHI Varietal: Barbera. Area of production: borgata Massucchi in the hamlet of Perno di Monforte d’Alba. Wine-making: the grapes, harvested when fully ripened, are immediately processed on reaching the cellar. Submerged cap fermentation lasts for over two weeks at a temperature of 28-29 °C, according to tradition. Maturation and ageing: the wine matures in traditional Slavonian oak barrels of great capacity. It is left to rest in the bottle before being marketed. It enjoys an extraordinarily long life. Sensory characteristics: ruby red in colour with garnet red nuances that become gradually more noticeable as the wine ages; fragrances that are subtle, intense, pervasive and lingering; a warm, full-bodied, complex, dry and well-balanced taste. TEMP 18 °C 24 VERDUNO PELAVERGA Denominazione di Origine Controllata At Verduno, early in October or late in September, the grapes of an extremely ancient native varietal are harvested, whose area of production is very limited despite its growing popularity: ‘’the Pelaverga Piccolo’’. As tradition demands, fermentation lasts for ten-twelve days at a temperature of 27-28 °C. After being devatted, the wine undergoes a process of malolactic fermentation, followed by a period of ageing in steel tanks and bottles. The resulting wine has a magnificent colour of ruby red verging on cherry. Its characteristic fragrance is fruit-rich with marked spicy notes. The taste is dry with intense recollections of spices and green pepper. It cries out to be tasted with its pleasing acidity, moderate tannin content, balance and body. To be enjoyed as a young wine or after a moderate period of maturation. It pairs well with all the dishes of our Langhe cuisine, especially with cold cuts and cheese. To be served at room temperature in a stemmed glass with a wide bowl and a slightly oblique mouth. TEMP 18 °C 25 RAPUJÉ LANGHE Denominazione di Origine Controllata ROSSO The name ‘’Rapujè’’ derives from an ancient custom of gathering the clusters of grapes that somehow got forgotten during harvesting, about two weeks after the event. When Nebbiolo, Dolcetto and Barbera are aged together, they bring back pleasant recollections of how “grandad’s wine” used to taste. Their perfect maturation gives us a quality wine. Varietals: Dolcetto, Barbera and Nebbiolo. Area of production: vineyards in Castiglione Falletto, Serralunga d’Alba, Barolo, Monforte d’Alba and La Morra. TEMP 18 °C 26 RAPUJÉ LANGHE Denominazione di Origine Controllata BIANCO An old dream of ours has come true. For many years, we had dreamed of flanking the great red wines of our cellar with a modern white wine of exquisite high quality, yet closely associated with our terroir. To accomplish this objective, we have combined Chardonnay with Sauvignon blanc, two prestigious varietals which have been cultivated on our hillsides for many years. Varietals: Chardonnay and Sauvignon blanc. Area of production: vineyards in Castiglione Falletto and La Morra. Sensory characteristics: a straw yellow colour with greenish nuances which tend to fade in time; delicate fragrance; a full-bodied, complex, dry and well-balanced taste. Wine-making, maturation and ageing: after white-wine fermentation, the product is aged in stainless steel tanks and then left to rest in the bottle before being sold. TEMP 10 °C 27 GARBLET SUÉ ROERO ARNEIS Denominazione di Origine Controllata e Garantita The sandy hills of the Roero, on the left bank of the Tanaro river, regale us with wines of an intense and delicate fragrance, rich in flavour owing to the composition of the soil itself. A delightful white wine of a most delicate straw yellow with greenish reflections. Its aroma is pervasive and fragrant with recollections of fresh fruit, acacia flowers and honey. Its taste is dry, well-balanced, with plenty of body and a great flavour. It pairs well with both starters and mildly flavoured dishes such as asparagus or plain risottos, gnocchi served with a cheese sauce and simply cooked fish. The subtle flavour of these dishes will be enhanced by the delicate bouquet, the savoury taste and engaging balance of a sumptuous wine from our terroir. Varietal: Arneis monovarietal. Area of production: vineyards in the municipal district of Vezza d’Alba, in the marvellous land of the Roero, on the left bank of the river Tanaro. Wine-making, maturation and ageing: wine obtained from the white-wine fermentation of Arneis grapes, aged in stainless steel tanks and left to rest before being sold. TEMP 10 °C 28 GARBLET SUÉ LANGHE Denominazione di Origine Controllata CHARDONNAY The Chardonnay grape variety has adapted marvellously to our hilly lands and to our climate; this vineyard is situated in the municipal district of La Morra. Wine obtained from the white-wine fermentation of Chardonnay grapes before being aged in stainless steel tanks; It is left to rest in the bottle before being marketed. With its beautiful straw yellow colour, it reveals the faintest hints of greenish reflections. Its delightful and particularly lingering fragrance is pervasive, intense, fruit-forward and floral. Its taste is dry, firmly structured and pleasingly sharp; delicate and elegant. Enhanced by a long lingering aroma. Excellent as an aperitif, ideal for pairing with appetizers and a pleasing accompaniment to first courses served with light sauces and main courses of fish and shellfish. TEMP 10 °C 29 GARBLET SUÉ LANGHE Denominazione di Origine Controllata SAUVIGNON Vineyards situated in the municipal district of Castiglione Falletto. Obtained from the white-wine fermentation of Sauvignon Blanc grapes. Aged in stainless steel tanks and left to rest in bottles for around six months before being sold. This is an elegant and slightly aromatic dry white wine, whose straw yellow colour is endowed with greenish reflections. Its characteristic and intensely grassy fragrance enhances a fresh assertive taste, with delicate aromas of sweet green pepper and gooseberry. It pairs well with all starters, asparagus dishes, mixed vegetables, spicy cold cuts, fish, snails, mixed fried foods and onion soup. An excellent wine for serving as an aperitif. TEMP 10 °C 30 VIONIÉ LANGHE Denominazione di Origine Controllata BIANCO A lovely vineyard planted in the municipal district of Castiglione Falletto. Obtained from the white-wine fermentation of Viognier grapes. Aged in stainless steel tanks and left to rest in bottles before being sold. An excellent white wine whose straw yellow colour reveals greenish reflections when still young. It regales elegant fragrances, aromatic notes of medicinal herbs and wild flowers with a fruity after-taste. In-mouth, It is dry, perfectly smooth and endowed with a lively minerality and citrusy freshness, which makes the tasting experience even more delightful. A finely structured wine whose excellent length offers rich and variegated nuances. It is versatile in its pairings, from fish starters to first courses, as well as main courses of fish and poultry. A fascinating wine of extraordinary longevity. TEMP 10 °C 31 BRUT ROSÉ METODO CLASSICO TRADIZIONALE Vino Spumante di Qualità Fruit of lengthy and keen experimentation, at last another “dream” comes true in the Giorgio Sordo winery of Castiglione Falletto. A magnificent ‘’rosé’’ brut, a classic Spumante wine of traditional bottle fermentation, obtained from the noblest grape varieties of our Langa territory. Varietal: Nebbiolo subvariety Lampia. Sensory characteristics: a delicate and generous mousse with a very fine and lingering bubble formation. Bright pink in colour, with attractive cherry red reflections. A fine, intense and elegant fragrance with an after-taste of fresh flowers, yeasts and sweet spices. Its taste is dry, rich, animated and generous; pleasantly savoury and very lingering. Maturation and ageing: once the second fermentation is terminated, the wine is left to rest before being sold. No liqueur de tirage is added. TEMP 10 °C 32 ALTA LANGA METODO CLASSICO TRADIZIONALE V. S. Q. P. R. D. Denominazione di Origine Controllata e Garantita The production of this magnificent dry spumante “classico”, of traditional bottle fermentation derives from the white-wine fermentation of Pinot nero and Chardonnay grapes : Alta Langa D.O.C. Varietals: Pinot nero and Chardonnay. Sensory characteristics: brilliant in appearance with a pervasive delicate mousse and extremely fine long-lasting bubbles. Straw yellow in colour with greenish reflections. A fruit-forward and complex fragrance with a bouquet that recalls yeast, fresh bread crusts and, at times, the delicate nuances of rose and vanilla. Its taste is dry, fresh, savoury and finely structured with a great lingering finish. Maturation and ageing: after bottle fermentation, it rests on its lees, prior to the “disgorgement”. TEMP 10 °C 33 BAROLO CHINATO Aromatized wine This splendid and rare after dinner or dessert wine was first produced in the heart of Barolo territory in Piedmont towards the late 1800s. It stems from an ancient recipe, jealously safeguarded by our family; it used to be a home-made remedy for certain ailments, prepared by infusing China calisaia bark and certain aromatic herbs from our Alpine regions in vintage Barolo. Matured at length in oak casks, this aromatized wine turns into an “elixir” of an amber red colour with faint ruby reflections, whose alcohol content is not particularly high. Its fragrance is spicy, intense and lingering, making it a particularly delectable and enticing wine. A unique product for true connoisseurs. Of the many ways to enjoy it, we particularly recommend diluting it with soda water and an ice-cube, as an aperitif. An excellent after dinner wine, enjoyed just as it is; warmed and served with a piece of orange peel, it makes an enjoyable and comforting drink, suitable for cold winter evenings. As well as being a sipping wine, it offers an interesting and surprising sensory experience when paired with chocolate-based desserts. TEMP 18 °C 34 GRAPPA DI NEBBIOLO DA BAROLO Strictly ‘’monovarietal’’, this grappa is obtained from the distillation of fresh pomace, which is still rich in wine from the Nebbiolo grapes used to produce Barolo. It has a magnificent straw yellow colour with golden reflections. The fragrance is intense, delicate and lingering, recalling the aroma of the grapes it comes from. Its balance is extraordinary and its taste is delicately smooth. The aromatic sensations of the finish are Intense and lingering. Our winery is proud to distil fresh pomace from the most prestigious vineyards, immediately after fermentation. Only in this way can the noble odorous substances be transferred intact to the distilled product, thus enhancing their typical characteristics and great prestige.
