Key Lime Pie - Miami Valley Hospital

With summer upon us, now is the time
to incorporate the wide variety of available fresh fruits in your cooking. Here

are two flavorful summer desserts you
are sure to enjoy: Fruit Kuchen, a
German flat cake topped with your
favorite fruits, and Key Lime Pie. Both
recipes are refreshing, healthful and
easy to make with minimal preparation
time.
Key Lime Pie
Yield: 8 servings
1 prepared graham cracker crust
2 cans condensed sweetened milk (not
evaporated)
1/2 cup egg substitute (EggBeaters®)
8 ounces lime juice
1 Tbsp. lime zest (optional)
1/2 tsp. salt
Green Food Coloring (optional)

1. Preheat oven to 350˚ degrees

juice, lime zest and salt. Mix well and let stand 5 minutes to thicken. Stir

3. Bake pie for 30 minutes.
4. While pie is baking, beat 2 egg whites and 2 tablespoons of sugar at high speed until
stiff, but not dry. Remove the pie from the oven. Gently spoon the meringue onto the
pie and place back in the oven for an additional 5-8 minutes or until meringue is lightly
brown.
Helpful hint: If you are preparing the pie to be served the next day, bake your pie 35-40
minutes without the meringue. Add whipped topping before serving.

Fruit Kuchen
Yield: 12 servings
1 package dry yeast
1/4 cup sugar/divided
1/2 cup warm water (105˚-115˚)
2-3/4 cups all purpose flour
1/2 tsp. salt
1/4 cup stick margarine or
butter, melted
1 large egg, lightly beaten

2-16 ounce cans mandarin
oranges
1 cup raspberries
1/2 cup blueberries
3 Tbsp.

1. Dissolve the yeast and 1 tablespoon sugar in warm water in a
small bowl, and let stand 5 minutes. Lightly spoon the flour into
dry measuring cups, and level with a knife. In mixing bowl
combine flour, 3 tablespoons of sugar and salt. Mix lightly. With
the mixer on low, add the yeast, margarine and egg to the flour
mixture until dough forms a ball. Mix the dough for an additional
minute. Turn the dough out onto a lightly floured surface and
knead lightly 4-5 times. Place the dough in a large bowl coated
with cooking spray, turning the dough to coat the top. Cover and
let rise in a warm place (85 degrees), free from draft, 1 hour or
until dough is double in bulk.
2. Preheat oven to 425 degrees.
3. Punch dough down. Pat dough into a 12-inch pizza pan coated
with cooking spray, and place pan on a large foil-lined baking
sheet. Arrange the mandarin oranges on concentric circles over
dough, and gently press them into the dough. Sprinkle 1/3-cup
sugar over the orange slices, and top with raspberries and
blueberries. Bake Kuchen at 425 degrees for 20 minutes or until
puffy and edges are well browned. Remove from oven and
drizzle with melted jam. Cool on a wire rack.
