The major tourism destination development projects initiated are progressing rapidly including Ile-à-Vache and Destination Jacmel. Mrs. Stephanie Balmir Villedrouin Minister of Tourism Besides those, the Haitian government has recently signed a major agreement with the cruise line "Carnival Corporation" for 70 million USD to transform l’Île de la Tortue (Northwest of Haiti) into a cruise destination. This would also mean a second cruise port in the country, after Labadie in the north, the result of a similar agreement signed with Royal Caribbean. We have not been idle in promoting the destination. During 2014, travel agents, journalists and other entities specializing in tourism came in large numbers to explore the country’s tourism potential. Articles, television reports were broadcasted everywhere, accurately reflecting their travelogue. Haiti was also showcased in more than a dozen major international industry events (fairs, summits, tourism fairs, etc.). Repositioning the destination also means encouraging quality service. In this sense, we provided owners of tourism establishments classified, during our last classification campaign, plaques delineating the hotel’s comfort level. The training sector was not omitted. New Haitian professionals from Ecole Hôtelière d’Haïti (EHH) who also studied in Antigua received their diplomas this year. We are working hard to reinvigorate HHE and the Institut de Formation Hôtelière et Touristique des Cayes (INFORHT). This Government has placed education at the forefront, and we at the Ministry of Tourism and Creative Industries (MTIC) want to ensure that our young people are properly trained to better serve in this sector. To all the private sector tourism operators, MTIC executives, the Haitian population in general who throughout the year who helped us by providing support us in our diverse activities on the ground, we wish a happy 2015. This renewal, which has been taking place for the past three (3) years on Haitian tourism, will continue in 2015. Haiti is awaiting you. En ce sens, nous avons remis aux responsables d’établissements touristiques classés, lors de notre dernière campagne de classification, les panonceaux indiquant leurs niveaux de confort. Le secteur de la formation n’est pas en reste. De nouveaux professionnels haïtiens provenant de l’Ecole Hôtelière d’Haïti (EHH) et d’Antigua ont reçu leurs diplômes cette année. Charlot eTanis Fashion Find By Mildred Boivert | Photos by Junior Plesius Louis Haiti by Design I was surprised when I received the assignment to interview Charlotte Tanis. “Who is she”, I asked myself? Even more surprising, was to learn that she is a local designer with her own clothing line called “Your Size”. How is it that I did not know her? Apparently I am one of the few, because Charlotte Tanis’ client list reads like a who’s who list of some of the most important men and women in Haiti. I arrive at Tanis’ atelier, nestled in an impasse off of Canapé Vert. She waits at the door to greet me, a striking woman with an almost cleanly shaved head, looking every bit the designer in a color-blocked ensemble. She asks me to give her a moment as she finishes up with a client who needs an outfit quickly for what seems like a very fancy affair. Before Tanis can finish reassuring the woman of her fabric choice, another client enters for a consultation. As she walks me back to the office, she explains that the afternoon is when she sees clients, leaving the beginning of the day for designing her line’s creations. “Your Size”, reflects why this designer’s clients love her line. Tanis shares that they love it, “Paske rad mwen toujou byen kanpe.” The fit is always to the individual’s size. She describes her style as very structured, and names Christian Lacroix and Elie Saab as her style icons for their fluidity, and powerful simplicity. Tanis herself studied architecture before receiving a scholarship and going on to study fashion in Spain. She has been designing for 15 years, and spent many of her early years working with some of the top designers in Haiti. Tanis seemed un-phased that I hadn’t heard of her before. She admitted to not participating in many of the fashion shows or fairs that have taken place in Haiti. She believes her work speaks for itself. Most of her clients come via word of mouth, referred by other satisfied clients. As she brandished and described some of her pieces, you could tell that each one was a labor of love. Tanis says she enjoys every part of the design process. Even when she doesn’t necessarily design the piece, like when a client comes with an idea, Tanis says she still enjoys guiding the fabric selection, and playing with shapes and textures. Tanis is a proud member of Women’s Entrepreneurship in the Americas (WeAmericas); an organization that invests in women-owned businesses throughout Latin America and the Caribbean which men- 6 MAGIC HAITI OCTOBER / NOVEMBER 2014 tors and provides training to women entrepreneurs. She recently attended one of their conventions which was held in Chile. When she is not running a full-time business and design label, Tanis works with several organizations, providing sewing and pattern making classes for young women and girls in Haiti. A short car ride takes me to the peaceful neighborhood of Bois Moquette where the perfect hideaway awaits. The gates open to a lush alley of palm trees leading me to uncover a breathtaking landscape. Sipping on a delicious cup of Haitian coffee, Jihanne tells me the story of this stunning success. After the devastating earthquake of January 12, 2010, the Sada family opened a bed and breakfast to receive the flood of outsiders. Then came the idea came to Jihanne’s parents, Lilianne and Maxime Sada to open a boutique hotel. At that point Jihanne was still accumulating experience abroad. She studied hotel management in the U.S. and then traveled to St. Barth’s to mind to describe this petite haven is “Zen”. The entire beauty of this place is its simplicity. The designers leave embellishments to the blooming gardens, while inside, the hotel’s eight rooms embrace dwellers with warm earth tones. The lounge area boasts a lovely collection of Haitian art, because Jihane wants the hotel to showcase our culture and art. The entire hotel’s woodwork is finished to perfection and made by a local artisan. I met with the owners on a Wednesday evening, and they informed me that I arrived just in time for their weekly wine tasting and tapas event. Held every Wednesday, it is a great way for customers to try the widespread wines populating the extensive beverage menu while sampling some popular small plates. As I tasted some of the tapas, including a to-die-for steak and brie slider, I ascertained how Le Gastronome came into existence. “There are not many eateries in the area, and we wanted to create a French bistro-like restaurant. The vision was to offer a gourmet dining experience with a 10 MAGIC HAITI OCTOBER / NOVEMBER 2014 brasserie atmosphere,” explains Bradford. With its beautiful red brick walls, wooden beams, and walls adorned with various wine bottles, Le Gastronome is indeed reminiscent of a French bistro. The soft music and dim lighting inside make it romantic enough for a first date, yet the outdoor seating is relaxing enough for dinners and drinks with friends. Rony tells me that though the menu evolves, there are select items that will always be available. One such item is the escargot appetizer. Beautifully presented in shells, each tender garlicky morsel begs to be eaten. Don’t be shy to ask for some crusty French bread to mop up the garlic butter left on the plate! A French bistro would not be complete without a steak au poivre and Le Gastronome does not disappoint with its version. The steak is cooked to perfection and served with savory sides such as parsley potatoes or fries, and vegetables. My dining partner raved about the salmon which she told me was carefully seasoned and obviously cooked with love. In addition to steak and seafood, burger-lovers should sample the Gastronome burger, one of the most wellliked items on the menu. What- ever you are in the mood for, you will find something to satisfy your palate. A meal at Le Gastronome can begin or end with the house cocktail, a mix of Cointreau, Grand Marnier, lime, passion fruit, and a few secret ingredients. If wine is more to your liking, one of the smiling and friendly wait staff can help you to pick out a bottle which will complement your dish. I ended my meal with a warm brownie a la mode and an apple tart. Both desserts were a great conclusion to a satisfying meal at a restaurant which is now one of my personal go-to spots. We don’t have to live like this. Cooking methods are changing in Haiti and everyone needs to get on board,” pants Alix Villedrouin as he deftly touches match to charcoal in one of Tacadaie’s improved stoves. It’s the third one he’s lit in a matter of minutes, each one bursting to life filled with his special recipe of sustainably produced carbon nuggets. It’s no secret that Haiti 12 MAGIC HAITI OCTOBER / NOVEMBER 2014 suffers from severe deforestation. The lack of trees limits food supply, facilitates devastating floods, decimates marine life, and spoils beaches. With charcoal as the most readily available energy source for cooking, a tree’s lifespan in Haiti is tragically short... yet it doesn’t have to be. The idea to produce an alternative to traditional charcoal came to Alix naturally. He and other family members who own and operate what is now the mountain resort, Le Montcel, used to host barbecues on the property on weekends. Each time they came to spend a few days, they would plant some trees. Alix reflected that it made no sense to plant trees and yet support deforestation by using charcoal to grill their barbecues. “Trees are a renewable resource of course, but at the rate that we use them is not sustainable,” he reasons. He made his first batches of Tacadaie by compressing leftovers from outdoor marketplaces. His first load of leftovers came from Arcahaie where he prevented 8 tons of ash from being pushed into the Bay of La Gonâve. For now, Tacadaie combines an abundant supply of leftovers with mineral coal, sawdust, rice husks, clay, amaryse, and cornstarch. Alix tweaks the recipe with the ingredients on hand, always keeping the same aesthetic and burning properties. “Others have tried and failed, but we are here to stay,” declares the winner of the 2013 Digicel Emergent Entreprenuer Award. Ticadaie’s success could be attributed to the fact that it is cheaper, performs better than the traditional charcoal, and yet looks and acts pretty similarly. The same quantity of Ticadaie sells for 450 gourdes at depots throughout Port-au-Prince, Montrouis, Les Cayes, Gona- ïves, and Cap-Haitien. One of Ticadaie’s loyal customers, Florana, has been selling food to her neighbors for two decades. She says that making 14 MAGIC HAITI OCTOBER / NOVEMBER 2014 the shift was easy. It burns hot for the first ten minutes (“Perfect for boiling water”) then glows for two hours. Today, the Ticadaie plant in Cité Militaire produces 15 to 20 tons daily. That’s about 6,500 tons per year. A far cry from current demand, but theirs is a scalable model. Corn, rice, and sugar cane waste abounds and innovation is Alix and his team’s specialty with regards to both product and marketing. They are playing with recipes that would employ locally produced caster and vetivert oil as combustion agents. Soon, we will see larger sized nuggets available for high energy consuming businesses such as dry-cleaners and bakeries. And, it’s now possible to ‘send’ sustainable charcoal to loved ones from abroad using Unitransfer. One of their greatest challenges is to incorporate today’s charcoal producers into the sustainable charcoal industry. Ticadaie surges forward fueled by their vision for a greener Haiti. In December 2013, the timeless institution, one of the oldest establishments in Pétion-Ville, underwent another major makeover. The result is a comely combination of modern and Victorian influences which nearly triples the hotel’s capacity. Natalie Buteau Antoine, General Manager, tells me that the vision to expand Kinam dawned before the earthquake of January 2010. “We took the opportunity after the earthquake to continue with our plan and start the massive project.” Natalie and her husband together selected the décor and furnishings of the hotel. It was essential to the design team that the spaces look and feel local. They want guests to know they are in Haiti. Local artisans constructed all of the attractive modern furniture. Haitian artists and designers were tapped for hundreds of pieces of original artwork. In fact, many of the paintings were bought from vendors on Place St. Pierre, just outside the hotel’s front door. Truly, the décor emphasizes local talent and exudes the spirit of Haiti. From its terraces, roofing and even hand-made wooden OCTOBER / NOVEMBER 2014 MAGIC HAITI 17 room numbers, the gingerbread style presents itself as a common theme. “The goal was to keep the gingerbread tradition and style, but also breathe new life into it,” explains Nathalie. Kinam Hotel continues to offer its guests superior customer service to ensure that patrons want for nothing from the moment they arrive. Guests can keep up with their usual workout routine by visiting the gym located on the second floor. And, raising the standard of hospitality further, guests at the newly renovated Kinam can choose from four eateries. Guests can pause, reflect, and refuel at the hotel’s coffee shop, or cocktail lounge which provides delectable tapas. A wine bar and Le Rond Point Restaurant will open soon. The latter pays homage to a former well-known downtown restaurant. Tipsy Bar located on the fourth floor, has garnered a lot of buzz and has become a hot local hang out spot. And for good reason. With its chic and sleek décor and youthful and modern vibe they offer tasty tapas and delicious drinks. It was the second time that I had the chance to actually sit down and really take in the “tipsy” experience with a few co-workers before my interview with the great minds behind Kinam. With Kinam’s signature rum concoction in hand, I chatted with company, people watched and took in the tunes the house DJ was rocking. All in all, I gathered that Tipsy Bar is definitely a unique spot on the nightlife scene here in Haiti. When an array of beautifully plated savory tapas made their way to our table it was finally time to get down to business… yes Magic Haiti readers we really sacrifice ourselves to bring you the 411! We indulged in plates of tuna tartar, mac and cheese with truffles, as well as djon djon chicken fried rice (basically a Chinese fired rice with a Haitian twist - the rice being in steeped in dry mushrooms), just to name a few dishes. Executive Chef Jovans who studied and earned his culinary degree at FIU, upon the suggestion of his good friend, and former classmate Christian Fombrun, Food and Beverage Director, who’d already made his way back home decided to also come back to Haiti and join his friend Jovans, Christian along with the input of Nathalie devised the delectable tapas menu. It is these three dynamic and creative minds that are behind the Kinam's success. Le Rond Point, in the works, is set to be the main dining option and with Chef Jovans at the helm of the kitchen the food is sure to be just as amazing as Tipsy. Family Centric Caribbean Living Linda Schutt Atricle by Regine Theodat Photos by Regine Theodat and courtesy Linda Schutt L inda Schutt is one of the many non-Haitians that call Haiti home. The Brooklyn native works directly with Nicolas Bussenius, Hotel Mont Joli owner, as the Business Development Manager for his hilltop haven located in Cap-Haitien. Linda has a hospitality background, however, that is not how she ended up in Haiti. Her Haiti story starts in of all places, Madrid, Spain. Linda was in Madrid doing a college study abroad program when she met her future husband, Conrad Schutt, a university student from Cap- Haitien, Haiti. Conrad was born in Port-au-Prince to a Haitian mother and a German father who is the current German Consulate in Cap-Haitien. Cap-Haitien is a quaint topically diverse town, home to some of the most important Haitian historical sites and breathtaking beaches. Little did Linda know a few years after meeting charismatic Conrad, she would be calling this place full of character home. After her study abroad experience she went back to New York. She maintained a long-distance relation- 20 MAGIC HAITI OCTOBER / NOVEMBER 2014 ship with her sweetheart while he was completing his degree in Florida. “Moving to Haiti definitely wasn’t on my mind.” Upon completion of her college degree Linda started working in the hospitality industry at the Marriot Marquis on Times Square, in the city that never sleeps, New York. Linda learned what makes an international hotel tick and this skill would become invaluable for her work at Hotel Mont Joli where she is assisting with the strategic planning of the Hotel’s growth in the near future. She describes her first experience in Haiti with candid honesty. When Linda arrived for a week-long trial visit, she was hesitant about if she could live in CapHaitien full-time. She even admits feeling so out of place that she cried. Then she cried again at the end of the week when it was time to leave! After a few months, Linda moved here full time and married her Conrad, who is the Royal Caribbean's port agent and owns a snorkeling company called Blue Water Adventures. They have three beautiful children together, ages six, four and nine month old girl, their very first daughter. Now Linda fondly considers Cap-Haitien home. When asked about what she loves about Haiti, she describes with admiration the relaxed family centric Caribbean environment. She appreciates the flexibility of Haitian culture with regards to family as she recognizes the struggle of many of her US based friends face having to balance their love-ones and a career. “I really am grateful to have the ability to spend so much quality time with my family.” Linda finds in Cap-Haitien, the perfect arena to let her professional talents shine within the nurturing Caribbean environment. Well I suggest Midi Express. Situated in Delmas 19 it’s conveniently located close to businesses surrounding the airport area. The concept to drive through and pick up a delicious fast food meal to get you on your way is novel. And having your meal quickly delivered to your office because you can’t 22 MAGIC HAITI OCTOBER / NOVEMBER 2014 get away is equally novel. Fast food favorites like hamburgers, hotdogs and sandwiches are on the menu, however, you’ll also find chicken or bacon pasta with a savory pesto or alfredo sauce…not your everyday fast food, huh! This is not any kind of fast food, this is fast food taken up a few notches. And I mean a few notches. I for one can say for sure, this is not your typical “fast food”, and though it comes to you in a timely manner they don’t skimp on flavor nor presentation. Everything on the menu is freshly made and the rotisserie chicken, to use a cliché, melts in your mouth. “We wanted to create a different kind of fast food experience, one where a quick meal while on lunch break could be provided, and, at the same time, discerning palates could be satisfied,” shares JeanPierre Rouzier one of the owners who is in charge of the kitchen. “Quality is important to us. I develop the menu and ensure that the recipes are respected. I am really happy to be able to marry my foodie side with business acumen. We pride ourselves of using fresh ingredients and no preservatives,” proudly asserts Jean-Pierre. On the premises they have a quaint dining area, festooned with small chouchounettes. Jean-Pierre’s partner David Bourjolly proudly mentions that their color scheme was selected by his sister, Martine Cantave, an interior designer and architect. “We wanted for the facility to attract customers just as the menu. I must tell you that it is my familial home which was transformed into the restaurant. Sentimentally, it has enabled me to bring together childhood memories as some of OCTOBER / NOVEMBER 2014 MAGIC HAITI 23 the outdoor decorations have been here since I was a child. And now it shows my creativity as an entrepreneur.” “We plan to expand. We will add a terrace to better accommodate more patrons. This addition will enable us to also extend our business hours. Recently it was discovered that etched gracefully on ancient rocks along the riverbed are markings from the Taino natives. The River Gomez in 26 MAGIC HAITI OCTOBER / NOVEMBER 2014 Foulon, Sainte Suzanne is frequented by the locals for its purported healing qualities and blessings. Perhaps today’s pilgrims reap the same benefits as the Taino’s who left behind beautiful petroglyphs, their legacy, centuries ago. It is no wonder it took so OCTOBER / NOVEMBER 2014 MAGIC HAITI 27 long for the carvings to be discovered. To reach the Taino petroglyphs, one must have a 4-wheel drive car and an expert driver. We were lucky enough to have just such a driver the day of our visit. Trying to beat the rain, he adeptly sped down a winding road along what Haitians refer to as a “falez” or a steep cliff. Then he took a sharp turn down a dirt road into a heavily for- ested area. The atmosphere cooled immediately and I felt a welcomed chill akin to autumn temperatures in regions which have the four seasons. It was a nice transition from the summer heat. We parked the car in a clearing and then forged on by foot towards the remote rock drawings. Our guide was a local 11 year old, referred to us by Fritz Jean who is working on the Taino project to preserve Haiti’s heritage. Our guide effortlessly scurried down the steep hill in flip-flops while we struggled in sneakers. As we neared the river, we began to hear the sounds of the water racing through rapids. Once we reached the river bed, the real sport of hiking began. We stepped into the icy water and waded on until we came to the famed Taino petroglyphs. The bright brick hue of the stone glistened with heat from the sun. To better see the etchings, our guide suggested we pour water on the rocks. Incredible figures and symbols emerged forth. If you are an archeology buff, a hiker, or just plain adventurous, check out the Taino carvings next time you are in the north of Haiti. Prepare to be awed by the whispers from the distant past.
